Cacao is the bean that chocolate is made from. In its raw state, cacao contains more antioxidant flavonoids than red wine, green tea, and blueberries. At Wildly Organic, our raw cacao powder cacao is high in fiber and a good source of iron and protein!To help retain the “raw” features of the cacao bean, the temperature in our extraction process is never allowed to exceed 120° F, and usually remains around 104° F (other cocoa powders may be exposed to temperatures as high as 300° F!). A high-accuracy thermometer monitors the process. The remaining dry, “cake-like” material is then cold-ground and fine-milled so that only the finest raw cacao powder particles remain for the finished product.
To ensure the safety and purity of our organic raw cacao powder, each batch of fermented cacao is lab-tested for antioxidant activity as exhibited by an ORAC score of 1086 umol TE/g.
